Organizing … Specialized!

Organizing…Specialized is group where we help each other with the home organizing challenges we face raising children with special needs. While our moderator is a Professional Organizer, she is not able to personally address each question raised, especially as the group grows. We can all share our tips, offer suggestions and help one another. Leslie will address as many questions as she can, but please remember she is our volunteer moderator.

    This is the first year we are traveling for Thanksgiving with our multiple food allergic teen. She is accustomed to a bountiful feast because I prepare and serve it in our home. My son, a food “selective” sort, will also be challenged. How will you organize for special dietary needs this holiday?

    This is our 3rd gluten free Thanksgiving. We have a LOT of food allergens in the family, but I just try to make sure I have a balanced yummy meal available for each of us, which means I make a bread item (and buy DH’s since he is the only one eating gluten!), I am going to try two new recipes, one for cornbread dressing “cookies” (savory ones) and the other is one I’m playing with to recreate green bean casserole without the beans, gluten, and dairy. I’m using broccoli and homemade fried onions and (homemade) condensed soup. Mashed potatoes two ways (one with dairy, one without). Butternut squash, salad, sour cream cucumbers, and of course turkey will round out the meal. I don’t usually make multiple versions of the same basic food item except for mashed potatoes, but this is a special occasion. Oh, and I’m getting a flourless chocolate cake from a local GF bakery that everyone can eat, and I’ll make apple pie too. :)

    Sounds delicious, Sylvia! Though we will bring homemade pumpkin bread and pie, my daughter and I decided this week we would make our own Thanksgiving at home over the Winter Break if it turns out there isn’t much for her this time around. It reminded me of one of the positives about kids with food issues – they learn delayed gratification!
